Next month World Sake visits Sohomare, one of Japan’s most innovative brewers working in the kimoto style. The brewery’s president, Jun Kono, is a maestro of sake blending. A label like Sohomare “Heart and Soul” kimoto junmai may contain sakes made with three different yeasts, and combine sake that’s been aged one, two and sometimes three years in the tank. Our host Kono-san speaks excellent English (and French too) and looks forward to sharing his philosophy of sake-brewing.
We’ll see how they do it, and sample three Sohomare labels with Jun Kono and toji (brewmaster) Toru Akita.
