We cordially invite you to join us for a very special sake dinner featuring Koshi no Kanbai sakes from Ishimoto Brewing Company in Niigata—pioneers of the “clear and dry” Niigata style. For this evening, four of the brewery’s premium labels have been chosen to pair with Chef Kusaka’s sake-inspired menu. Koshi no Kanbai labels go exceptionally well with food, due to their gentle umami imprint, which helps bring out the flavor of each dish.
About the Chef
Chef Casey Kusaka grew up in Kaneohe where his first job was at Zia’s. He graduated from CIA and began to develop his culinary style at Momofuku and Lincoln Ristorante in New York, further honing his skills at Nisei and Californios in San Francisco before returning to the Islands. There’s a little taste of Hawaii in all of his dishes.
