Please join chef Hiro Tawara for an exquisite nine-course kaiseki dinner featuring Masumi sake from Nagano prefecture. The sake pairings include seasonal highlights such as Masumi “First Run,” an “on the lees sparkling sake,” and the brewery’s signature daiginjo release “Seventh Heaven.” Our special guest is Keith Norum from Miyasaka Brewing Co., maker of smooth, easy-drinking sakes for 360 years. Masumi sake, brewed by the Miyasaka family in the town of Suwa since 1662, is one of the great names of the sake world. Known for their pureness and clarity, Masumi sakes also possess a comforting quality that has endeared them to generations of sake drinkers.
Keith Norum provides marketing support and sake education for Masumi clients across the globe. In addition to conducting trainings for restaurant staff and owners, he has presented sake seminars at Vinexpo Bordeaux, Prowein Dusseldorf, Hong Kong’s School of Hotel and Tourism Management, the Japan Sommelier Association, the National University of Singapore and the Culinary Institute of America.
